Sometimes the extraordinary hides away in the most common of places. Such is the case of Casa Maruka, Grandma’s house, located just outside the historic center on an unprepossessing side street near the Plaza de España. As the name would suggest, at Grandma’s house, tradition is closely guarded, but the present remains just as firmly on the menu. Over the stove Maria Jóse Calabria and her husband Alberto Serrano source the finest products to conjure up their contemporary takes on Spanish classics. Very gently with love and respect for the original recipe. One sees and tastes both immediately. Delicious: the Coca de atún marinada con salsa de soja y compota de tomate (marinated tuna fish with soy sauce and tomato compote), the Rabo de toro quisado al vino tino (cooked bulls tail in red wine sauce) and the Callos de ternera con pata y morro (smotherered veal cutlets). The exclusively Spanish wines are as carefully chosen as the first-class ingredients.
